FIFO stands for first in, first out. Rotating stock ensures older cuts get used before newer cuts do.
When you put away your cuts, add a date of arrival and the name of the cut so you can track freshness at a glance. Then, create a simple Freezer Log. Some people like a whiteboard, others like a phone app. However they do it, the goal is to make sure you know exactly what’s in your freezer at all times. That way you can use the oldest cuts in order.
While meat remains safe indefinitely if it keeps at 0°F, quality begins to decline after 6-12 months. Vacuum sealing the meat can help it last longer, but either way it’s best to use your beef within one year.
What’s the best way to thaw beef?
While “counter” thawing is common, it presents food safety risks. The surface of the meat can enter the “danger zone” while the center remains frozen. That would be an awful shame after taking the time to buy farm fresh.
We recommend thawing inside of your refrigerator, since fridge temperatures will slowly defrost it while keeping it safe. This requires a little more planning, but ensures your family won’t get sick.
