Bulk buying is one of the best ways to purchase grass-fed beef. But we find plenty of new customers who are a little concerned about storing so much meat for so long.
Never fear. With a little advance planning, it’s easy to store your beef.
Check Your Freezer Size
Typically, you’ll need one cubic foot of freezer per 30 pounds of beef. A whole cow will provide roughly 600 pounds of beef. You’d need 20 cubic feet of freezer space for the whole cow.
Most of our customers have dedicated freezer space to work with. You may want to buy a standing freezer for the garage if you plan to invest in bulk beef. You could also split an order with a neighbor if you don’t have quite enough space.
Order Only What You Need
You can store bulk beef for an indefinite amount of time if you freeze it correctly. Nevertheless, the quality of the beef tends to deteriorate after 6 to 12 months. Thus, we only recommend buying what you’ll need to see you through that amount of time.
Take the time to figure out how much beef your family usually eats during one month, and then multiply that figure by six or twelve, depending on the storage space you have available to you.
Divide Into Portions
While we pre-cut the beef into roasts, grind up ground beef, and present you with fine rib racks, only you know how much your family eats at one sitting. Portion out the beef and store it as it will be eaten.
It’ll last longer, and you’ll get an even better sense of exactly how long you can expect the beef to last.
Use Vacuum Sealing & Labeling
Vacuum sealing is the absolute best way to keep your meat safe and tasty. We recommend vacuum sealing and labeling every piece with the date, cut, and portion size.
Vacuum sealing removes all the oxygen from the meat, improving its shelf life by a considerable margin. Ziplock bags will do in a pinch, but we don’t recommend it if there’s any way you can reach for a vacuum sealer instead.
Never Freeze After Thawing
Freezer burn destroys meat’s flavor and renders it unsafe to eat. Once you’ve defrosted your meat, you must cook and eat it in a reasonable amount of time or it will go bad.
